Okay… I’m in Auckland! Yay!
So I thought this was going to be the worst day. I prepared for it. I travelled with soy milk. And snacks. But I haven’t needed them.
I had lunch in the airport – an amazing bagel with avocado, tomato and basil, with a lemon/fennel/olive oil dressing…. noms indeed. And a soy latte.
Dinner I had sushi. Not terrific sushi, but it was a good mix of flavours. I actually had vegan options for food!
I feel good. I will carry on being vegan next week at uni and see what happens. The wheels may fall off…. who knows. If I can last a month, that would give a solid outcome as to health and/or lifestyle differences.
